This typical Frankfurt specialty is easily prepared.


- Mature Harz cheese

- Onions

- White wine vinegar

- Cooking oil

- Salt, pepper and sugar

- Caraway seeds

- Served with dark bread and butter


Place the thick slices of cheese on a shallow plate.

Peel and dice the onions. Stir the onions, vinegar, oil, sugar, salt, pepper and caraway seeds and spread this marinade over the cheeses. Insiders do not add the oil until the salt has dissolved in the vinegar.

The longer the cheese marinates, the fuller the aromatic flavour.

Locals ususally only use a knife to eat their "Handkäs mit Musik" pushing some cheese with marinade on a buttered piece of bread and biting into it, no fork is required.

The cheese is rich in calcium and lactose-free.
